Ribs

Only $9 per person, we are a mobile catering service and we come right to your business or residence. This is an all-you-can-eat per-person price.

I like to use the spare rib because it has more fat, and more meat than a baby back. A more robust pork flavor, and they don’t dry out!

I serve whole spares and trim them for St. Louis style. (Trim the chin bone off the bottom and trim the top along the spine after cooking.)

First, I dry rub the rubs with a brown sugar and Cajun mix. Then they smoke for 4-6 hours at 200°.

As they cook, the brown sugar caramelizes on the rack. Then I brush on some barbeque sauce and slice individual ribs.

Serve coated with a sweet and tangy barbeque sauce.


 

   

All meats are supplied by Meadow Meat Co. in Middletown, CT and are also available to purchase by the pound (precooked and frozen). Pitmaster Chad Cyr is certified and insured.
